How to Make Nigerian Coconut Rice

“Now you see me, now you don’t” in Nigeria, Rice is the number food that has every right to make that statement. It never ceases to appear in one form or the other on our tables.

As the name implies, coconut rice is one of the many forms of the appearance of rice; this time with ingredients that gives it a coconut flavour. The Nigerian coconut rice of course is a regular in many Nigerian kitchens and it’s delicious too.

How to make Nigerian coconut rice: Tools needed

  • Grater
  • Blender
  • Sieve
  • Medium sized bowl

How to make Nigerian coconut rice:  Ingredients

  • 1 coconut (big ball)
  • 4 cups of rice
  • 2kg Chicken/Beef
  • Salt (to taste)
  • Vegetable oil
  • Pepper (to taste)
  • Seasoning cubes
  • 2 Onion bulbs
  • 500ml Fresh ground tomatoes
  • Clean and Fresh water
  • Spice (curry, thyme, beef seasoning)

How to make Nigerian coconut rice: Instructions

  1. Break the coconut and remove it from the shell (dispose the shell afterwards), you can also drink the water.
  2. Grate the coconut and pour the shredded pieces in a bowl.
  3. Pour lukewarm water on the shredded pieces and leave for about 45 – 50mins. (After which it would have changed to a milky white liquid).
  4. Pour the content into a sieve (of course, the sieve should be on top of a collecting bowl). Squeeze the remaining shaft to get out as much milky content as possible. Then set the milky water aside.
  5. Wash and Cook the chicken/beef with onions and spices to taste. Make sure it’s soft but not messy. Reserve the water for further cooking.
  6. Parboil the rice (watch the water at this stage so that your rice does not end up muddling together)
  7. Pick out the chicken and deep fry it.
  8. Add half cup of vegetable oil to a pot on fire and allow it to heat up for a minute.
  9. Now, add your pasty tomatoes and add pepper. Allow it to fry for around 5-10 minutes.
  10. Add the water extracted from the chicken and add the coconut milk.
  11. Add seasoning cubes to taste.
  12. Allow the water to boil and empty your parboiled rice into it.
  13. Add salt to taste.
  14. Allow to cook till it’s soft and ready for consumption. (Around 30-45 minutes).

Your coconut rice is ready to be served with the fried chicken/beef and a chilled drink.

Notes

  • Add water from time to time if you feel your rice is drying up and it’s yet to be soft.
  • If you don’t like your blending tomatoes for your rice, you can as well just slice and introduce it as step 9.
  • If you’ve added enough seasoning to the chicken/beef, don’t bother adding to the rice when boiling, so you end having dishing out over-seasoned coconut rice.
  • Make sure the vegetable oil is not too much as it can to some extent reduce the coconut taste of the rice.
